Low Fat Oatmeal Cookies Recipe

Oatmeal cookies are a healthy, wholegrain food. They provide high levels of fiber, low levels of fat and it has one of the highest protein levels of any grain.

One thing I’ve been wanting to make for a while is oatmeal cookies and when I saw a few recipes, I HAD to make them!  (I didn’t use any particular recipe but a  combination of a few.) I’ve made them a few times since; and they are amazing!!
These fiber-filled, low fat cookies taste so good that it will be hard to stop at just one, two or three!! 😛

A cookie recipe without sugar or butter might not sound like a cookie at all, but I definitely recommend giving it a try!

Ingredients (20 cookies):

Liquid Ingredients
½ Cup of Olive Oil
1 tsp Vanilla Extract
1 Egg
½ tsp of Stevia powder

Dry ingredients
1 ½ Cups Oats
1 Cup Whole-Wheat Flour
½ tsp baking soda
½ tsp baking powder
½ tsp Salt
½ tsp Nutmeg
2 Tbsp Cinnamon

Optional healthy ingredients: flax seeds, nuts, smashed banana, raisins, coconut…

Place first dry ingredients in a bowl, and the liquid ones in another. Beat until well blended. Add the dry and liquid ingredients together (if the dough is too wet, add a bit more flour). Stir any of the optional ingredients (if any). Beat well. Preheat oven to 170ºC and let the dough in the fridge for 10-15 minutes.

Drop the dough onto a baking sheet and bake for 10 minutes or until the edges of the cookie get slightly firm.
